Corn oil, also known as maize oil, comes from the part of corn called the germ. People mostly use it for cooking because it can handle high heat, making it great for frying. It’s also a key ingredient in some margarines.
Corn oil is usually cheaper than other vegetable oils. One bushel of corn gives about 1.55 pounds of corn oil, which is around 2.8% of its weight.
Corn agronomists have developed high-oil varieties; however, these varieties tend to show lower field yields, so they are not universally accepted by growers.
