Derived from Persian walnuts (Juglans regia), walnut oil is obtained by extracting oil from the nuts. Every 100 grams of this oil supply approximately 63.3 grams of polyunsaturated fatty acids, 22.8 grams of monounsaturated fats, and 9.1 grams of saturated fats. Importantly, it is devoid of cholesterol.
In contrast to the majority of nuts characterized by high levels of monounsaturated fatty acids, walnut oil predominantly consists of polyunsaturated fatty acids, making up 72% of the total fats. Notably, it is rich in alpha-linolenic acid (14%) and linoleic acid (58%), with oleic acid contributing 13% to the overall fat composition.
